Beans with peppers and aubergines

Ingredients
INGREDIENTS
- 250 gr. large white beans
- 2 tablespoons parsley, minced
- 4 aubergines, cut in medium chunks
- 5 sweet pepper, cut in medium chunks
- 2 leeks, sliced
- 2 onions, minced
- 1 fennel root, cut in medium chunks
- 1 carrot, cut in cubes
- 3 tomatoes, minced
- 120 ml Altis Chania Crete Virgin Olive Oil
- Red pepper
- Salt
Instructions
EXECUTION
- In a saucepan, we boil the beans for 45΄ in plenty of water, we drain them and keep the boiled water.
- In a saucepan, we saute the vegetables in half the olive oil for 5΄; we add the tomatoes, beans, salt and pepper.
- We transfer the contents of the saucepan into a heat-resistant baking pan and we add about 250 ml. form the boiled water and the remaining olive oil.
- We bake the beans in a preheated oven at 220°C for 40΄, and then serve.
- In addition to aubergines, we can also add other seasonal vegetables
