Ladenia from Milos

Ingredients
For the dough
- 350 gr. all purpose flour
- 50 gr. hard flour
- 320 ml. water (approximately)
- 8 gr. dry yeast
- 50 ml. Altis Chania Crete Extra Virgin Olive Oil
- 1 teaspoon sugar
- 1 teaspoon salt
Additional ingredients
- 2-3 large onions
- 6 large tomatoes
- 100 ml. olive oil
- Coarse salt
Instructions
EXECUTION
- In a bowl, we dissolve the yeast and sugar in the water, add 3 tablespoons flour and leave the mix in a warm place for 10΄.
- We add the remaining flour and olive oil in the yeast mix and we knead it until it becomes an elastic dough; we leave it aside to rest for 10’.
- We cut the tomatoes in thick slices, place them in a strainer and sprinkle them with coarse salt.
- We pour half the olive oil in a large baking pan, add the dough and press it with our hands so as to spread it all over the pan.
- We leave the dough (ladenia) for 20’ in a warm place and then add the onions and tomatoes; we sprinkle it with coarse salt and pour the rest of the olive oil over it.
- We preheat the oven at 200°C and bake the lathenia at 180°C for 45 min.
- We serve the lathenia hot or cold.
- We can add oregano, olives or capers
