Tabbouleh with vegetables and citrus vinaigrette, flavoured with mint

- 200 gr. groats
- 3 scallions, minced
- 50 gr. baked Florina pepper, cut in stripes
- 8-10 cherry tomatoes, cut in half
- 1 bunch of mint, minced
- 1 bunch of parsley, minced
- 70 ml. Altis Traditional Extra Virgin Olive Oil
- Juice and zest from ½ medium orange
- Juice and zest from 2 lemons
- Pepper
- Salt
Instructions
EXECUTION
- We soak the groats in 400 gr. warm water and the juice from 1 lemon.
- We place the groats in a large bowl, and add the vegetables, citrus fruit juice, salt, pepper and olive oil.
- We marinate the tabbouleh for 1 hour in the fridge and then serve.
We can add minced coriander to the salad.
