Traditional Fanouropita Cake

Ingredients

- 200 ml Altis Classic Olive Oil
- 190 g sugar
- 100 g roughly chopped walnuts
- 50 g raisins
- 250 ml carbonated orange drink
- 380 g self-raising flour
- 1 tsp baking soda
- 1½ tsp ground cinnamon
- ½ tsp ground cloves
Instructions
EXECUTION
- Preheat the oven to 180°C.
- In a bowl, mix together the flour with the baking soda, cloves, cinnamon, raisins and walnuts.
- Pour the olive oil into the mixer bowl, add the sugar, and beat for 2 minutes.
- Add the orange drink and gradually add the flour in three batches.
- Transfer the mixture to a medium baking tin (greased) and bake for about 50 minutes at 180°C.
- As soon as the cake has cooled, cut it into pieces and dust with icing sugar (optional).
- Traditionally, Fanouropita Cake is made either with 9 or 11 ingredients, so you can add a little brandy and some lemon zest, if you like.
