Traditional Fanouropita Cake

Ingredients

INGREDIENTS
  • 200 ml Altis Classic Olive Oil
  • 190 g sugar
  • 100 g roughly chopped walnuts
  • 50 g raisins
  • 250 ml carbonated orange drink
  • 380 g self-raising flour
  • 1 tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground cloves

      Instructions

      EXECUTION
      1. Preheat the oven to 180°C.
      2. In a bowl, mix together the flour with the baking soda, cloves, cinnamon, raisins and walnuts.
      3. Pour the olive oil into the mixer bowl, add the sugar, and beat for 2 minutes.
      4. Add the orange drink and gradually add the flour in three batches.
      5. Transfer the mixture to a medium baking tin (greased) and bake for about 50 minutes at 180°C.
      6. As soon as the cake has cooled, cut it into pieces and dust with icing sugar (optional).
      - Traditionally, Fanouropita Cake is made either with 9 or 11 ingredients, so you can add a little brandy and some lemon zest, if you like.
