Hilopites Pasta with “Peasant” Minced Meat

Ingredients
For the “peasant” minced meat
- 400 gr. “peasant” sausage
- 1 onion
- 1 green pepper
- 1 red pepper
- 250 gr. tomatoes
- 1 tablespoon concentrated tomato juice
- 1 teaspoon sugar
- 40 ml. Altis Kalamata Extra Virgin Olive Oil
- ½ teaspoon oregano
- 1 teaspoon thyme
- 2-3 allspice grains
- Freshly ground pepper
- Salt
For the hilopites pasta
- 400 gr. hilopites pasta
- 20 ml Altis Kalamata Extra Virgin Olive Oil
- Kefalotyri cheese, for serving
Instructions
EXECUTION
- We mince the onion and cut the peppers in stripes.
- We mince the tomatoes.
- We open up the sausage with a knife, remove the outer cover and keep the minced meat.
- For the minced meat, we heat the olive oil in a saucepan and saute the onion; we add the minced meat and continue to saute for 4-5’.
- We add the peppers, concentrated tomato juice, tomatoes, sugar, allspice, oregano, thyme, salt and pepper.
- We lower the heat and boil the minced meat for 25-30΄.
- We boil the hilopites pasta, strain them and pour the olive oil over them.
- We serve the hilopites pasta with the “peasant” minced meat and grated kefalotyri.
- We can add leek and carrot to the minced meat
